This Dark Chocolate Raspberry Bark is a delicious blend of rich, dark chocolate, raspberries, and a hint of coconut oil.
Ingredients
- 1 pint of raspberries (washed)
- 1/2 bar of at least 70% dark chocolate (I used Lindt 90% dark chocolate)
- 1 tsp organic virgin coconut oil
- A sprinkle of cinnamon (Choose your own toppings: cinnamon, sea salt, nuts, peanut butter, coconut flakes)
Instructions:
Begin by lining a baking sheet with parchment paper.
Scatter the fresh raspberries evenly over the baking sheet
Using the microwave, melt the dark chocolate and coconut oil together, stirring occasionally to ensure even melting. This will take about 30 seconds.
Once melted, pour the chocolate mixture onto the raspberries, spreading it out into an even layer.
For a finishing touch, sprinkle your choice of toppings for a perfect balance of sweet and salty flavours (i.e. cinnamon, sea salt, nuts, peanut butter, coconut flakes)
Place the baking sheet in the refrigerator for at least 2-3 hours or until hardened
Once set, break the chocolate bark into rustic pieces using your hands or a sharp knife.
